We are always fans of Caribbean style sauces. They bring together flavors of Scotch Bonnet peppers (or sometimes Habaneros) with an interesting mix of jerk-style spices and often Mustard. This sauce is no different. Upon first taste this sauce delivers a moderate sweetness of Mango and Brown Sugar combined with bold savory flavors and spices including Mustard, Cumin and Curry Powder. These savory flavors at first overshadow the others, but as the impact of the spices begin to fade the moderate tanginess of Apple Cider Vinegar builds. The peppery flavor and heat of Scotch Bonnet peppers comes next and is finished off with a moderate saltiness. Mango and Curry Powder are standout flavors in this sauce.
This sauce would compliment meat and vegetable dishes where a Caribbean palette is desired. The sauce is bold and full flavored and will stand up to meats like beef and lamb but still pairs well with lighter flavored meats such as chicken and fish.
