If you like Garlic…keep reading! Don’t let the “Fish Sauce” scare you. There’s no sign of fishiness in this sauce. So why is it there? To add a deep, rich, umami flavor!

When you first taste this sauce you notice a moderate Sweetness along with the deep Umami taste. Then an intense rush of Garlic streaks across your tongue. Next you notice a fairly strong tanginess from the Vinegar but it’s been mellowed by the Sugar so it doesn’t have that harsh bite. Then a Salty aftertaste appears followed by the savory flavor and heat of the Chiles adding some spice to your food.

This sauce was terrific for dipping fried calamari. On a 5 point sacle the heat for this sauce is in the low 2s.
